Sausage and Pepper Pappardelle Pasta with Basil Pesto

  • Place a large saucepan over medium-high heat. Add the oil and Italian sausage to the pan. Cook for 3-4 minutes on all sides or until completely browned. Remove sausage and set aside.
  • Add the carrot, celery, onion, peppers and garlic to the same saucepan and stir. Sauté until peppers are softened, about 6-8 minutes.
  • Stir in the beef broth. Cook for 5 minutes. Stir in the tomatoes and simmer for 10-12 minutes more.
  • Meanwhile, bring 5 quarts of salted water to a boil. Cook the pasta according to package instructions. Drain.
  • Slice the Italian sausage and add to the saucepan. Stir in the hot pasta and cook together for 2-3 minutes to marry flavors.
  • Serve drizzled with pesto.
