  • In a saucepan, cook bacon until just crisp. Transfer bacon to a separate dish.
  • Keep 1 tablespoon of bacon fat in the pan and discard the rest. Add onion and garlic to the pan.
  • Once onions are soft, stir in mushrooms, thyme, salt and pepper.
  • Add goat cheese, cream and Parmesan. Stir until sauce comes together. If too thick, add pasta cooking water a little at a time.
  • Toss sauce with hot pasta, chicken and bacon in the pan. Cook together for 2 minutes to marry flavors.
