Creamy Italian Pasta Salad

This creamy, dreamy, packed-with-goodness pasta salad is packed with different textures & flavors – creamy roasted red pepper dressing, crunchy bell pepper & juicy tomatoes, & the very best grilled artichokes & calamata olives. It’s great served warm or cold, making it perfect to bring to parties this summer or to meal prep for an easy side dish to keep on hand all week long.

  • Cook the pasta in boiling salted water to al dente according to package directions. Drain & rinse with cold water. Set aside.
  • Blend the creamy red pepper dressing: Place the cashews, red peppers, lemon juice, garlic, dried basil or oregano, Kosher salt & ground black pepper in a high speed blender. Blend until smooth & creamy, 1-2 minutes.
  • Toss the salad: Add the pasta to a large mixing bowl with the tomatoes, bell pepper, onion, artichoke hearts, calamata olives, Kosher salt & ground black pepper. Pour the creamy roasted red pepper dressing over the top. Toss to combine.
  • Serve the pasta salad chilled or at room temperature. The pasta salad will keep in the fridge for up to 1 week. Serves 10 - 12. Enjoy!
