Fried Artichoke Hearts

  • Cut a small slit into each artichoke heart. (Do not halve the artichokes.) Stuff each with pepper jack cheese.
  • In a mixing bowl, beat the egg with grated Parmigiano, salt and pepper. Place the flour and the breadcrumbs in 2 separate small shallow bowls.
  • Dip each artichoke heart into the flour, then the egg mixture and then the breadcrumbs. Set aside on a plate.
  • Fill a saucepan with 3-4 inches of oil. Set at medium-high. Once hot, place artichokes in the pan using tongs. Fry in batches, careful not to overcrowd the pan. Fry artichokes until golden brown, turning occasionally to fry each side.
  • Remove artichokes from oil and place on a paper-towel-lined plate to drain.
  • Meanwhile, in a separate saucepan, warm up the marinara.
  • Place artichokes on a serving platter. Serve with marinara.
