Slowly cook 1 finely diced shallot in butter. Add 2 cups rice and toast until butter is absorbed and rice releases its aroma. Stir in ½ cup of dry wine and simmer. Stir until liquid is absorbed. Add in warmed broth (8 cups total) ½ cup at a time, stirring regularly. Once liquid is absorbed, add the next. Continue until rice is al dente and texture is creamy. Turn off heat. Just before serving, stir in a few dabs of butter and 1 cup grated Parmesan to finish the dish. Cooks in about 18 min. 

This basic prep is the foundation for any risotto dish you wish you create. Simply add your favorite ingredients (mushrooms, zucchini, shrimp, asparagus, Taleggio, etc.) towards the end of the cooking process. Be sure to pre-cook and season all of your additions!
