Eggplant Caponata + Ricotta Crostini

INGREDIENTS
- 1 Loaf crusty bread or ciabatta
- 1 (6.7 ounce) jar DeLallo Eggplant Caponata
- Ricotta Cheese
DIRECTIONS
- On a large baking sheet, arrange slices of bread, face up. Toast bread slices under broiler until golden brown, about 2 minutes. Remove from oven.
- Spread ricotta onto each slice of toast.
- Top each slice with a generous scoop of your DeLallo Eggplant Caponata.
